Simple Chorizo Tacos

1 lb. Chorizo
½ Yellow onion, diced
4 Cloves of garlic, minced
1-2 Jalapenos (depending on heat preference), diced
2 Carrots, shredded
1 Bag Mexican style shredded cheese
1 Tomato, chopped
Fresh Cilantro
Hard Taco Shells
2 Limes, cut into four slices

Add Chorizo to skillet, heated on med-high heat. Cook until brown and fat is rendered out. Drain any excess fat. Reduce temperature to medium and add garlic, onions, and jalapenos. Cook for ten minutes, mixing occasionally. Add carrots, mix well and cook for another 5 minutes. When finished, place in hard shells and top with cheese, tomato, cilantro and squeeze on juice from a slice of lime.

Other suggestions:
-Cut chroizo in half (use ½ lb. over 1 lb. and replace with ½ lb ground beef). Can add plain ground beef or ground beef precooked with taco seasoning.
