Apple and Swiss Potato Puree

Unfortunately, I cannot take all the credit for this great recipe. I first heard such a combination on an episode of "Chopped," but details were not provided, so I attempted to do my best and create a delicious combination of apple, Swiss cheese and potatoes. It turned out exceptionally well!


3 Large Baking Potatoes
1-2 Granny Smith Apples (Depending on how strong of an apple flavor your prefer)
2.5 Oz of Swiss cheese, grated
3 Tbsp Butter
1 C. Buttermilk, split into two half cups
1 Tsp Pepper
1 1/2 Tsp Salt



Bring water to a boil on a pot on the stove. Peel and cube potatoes and add them to the boiling water. Turn heat to medium. Peel, remove core, and cube apple(s) and add them with the potatoes. Cook until a fork can easily poke through both potatoes and apples. Drain water and turn heat to low. Mash potatoes and apples very well until there are no longer and chunks in the mixture. Add butter, one tablespoon at a time and mix well. Then add one of the half cups of buttermilk, pepper and salt and mix thoroughly. Add Swiss one half at a time, making sure each piece is fully melted before adding the next. Finally, add the last half cup of buttermilk to the potatoes and whip until light and fluffy. Serve immediately.
