Braised Short Ribs, Parmesan Crusted Asparagus, Sweet Potato Biscuits with Cinnamon Butter
I love making short ribs, because there are so many different things you can do with them! I have a few more recipes for short ribs that I will be posting when I get the chance :)
For the Short Ribs:
4 Short Ribs
Sea Salt
Pepper
1 Tbsp. Vegetable Oil
1/2 C. Coke-A-Cola
1 C. Brewed Coffee
1/4 C. Water
1/2 Tsp. Chili Powder
1 Tsp. Garlic, Minced
1/2 Tbsp. Red Pepper Flake
1 Tsp. Sugar
Preheat oven to 250 degrees. Coat ribs generously with salt and pepper.
Heat oil in medium sized saute pan at medium heat. Place ribs in pan and brown on all sides.
Mix together the rest of the ingredients in an oven proof pan. Place ribs in pan. Liquid should surround, but not cover the short ribs. Place in oven for at least three hours, basting every half an hour or so. Remove from oven and let rest at least ten minutes before serving.
For the Parmesan Crusted Asparagus:
8 Asparagus Stalks
1 egg, beaten
1/2 Tbsp. Coriander
2 Tsp. Sea Salt
1/4 C. Parmesan Cheese
1/2 C. Panko Breading
2 Tbsp. Peanut Oil
Mix together the coriander, salt, Parmesan cheese, and Panko on large plate. Place each asparagus stalk in the beaten egg and coat well. Place in Parmesan cheese mixture and coat completely. Heat peanut oil in stove top pan on medium heat. Place asparagus in pan and cook for about 5 minutes, or until golden brown on each side.
For the Sweet Potato Biscuits and Cinnamon Butter:
1 Sweet Potato (Med. Size), Peeled and Cubed
3 C. Flour + extra
1 Tbsp. Baking Powder
1/3 Tbsp. Salt
1/3 C. Cold Butter
1/2 C. Sour Cream
1/2 C. 7Up
1/4 C. Melted Butter
4 Tbsp. Butter
1 Tsp. Cinnamon
2 Tbsp. Brown Sugar
1/4 Tsp. Nutmeg
Boil water in a small pot on the stove. Add the cubed potato pieces. Cook for about 15 minutes, or until potato pieces are soft enough to poke a fork through completely. Drain water and mash potato thoroughly. Set aside. Preheat oven to 450 degrees. Mix together in large bowl the flour, baking powder and salt. Add the butter in small pieces at a time. Add sour cream, 7 up and mashed sweet potato and mix well. Add more flour if needed. Coat bottom of an oven safe pan with flour. Form balls with the dough and place in pan, then pour over melted butter. Place in oven. Cook for 15-17 minutes.
Meanwhile, let butter sit out until soft. Mix the cinnamon, brown sugar, and nutmeg with the butter. Whip up and place over biscuits or serve on the side once removed from the oven.
