Broccoli & Cheese Soup

1/4 C Butter
1/4 Yellow Onion, Chopped
2 Cloves Garlic, Minced
1/4 C. Flour
1 1/2 C. Half and Half
1 C. Milk
1 3/4 C. Vegetable Stock
3 C. Broccoli, Chopped
1 Tsp. Paprika
1 1/2 Tsp. Red Pepper Flake
1 Tsp Pepper
1 1/2 Tsp Salt
Pinch of Cayenne
9 Oz. Sharp Cheddar, Grated
3 Oz. Aged Swiss Cheese, Grated

Melt 1 tbsp. butter over medium heat. Saute onion and garlic for about 5-7 minutes. Set aside. In a large heavy-bottom pot, melt remaining butter. Add flour and stir constantly for approximately 3 minutes, until flour has thickened. Slowly add half and half, milk and stock. Mix well and heat until just under boiling temperature. Make sure not to boil, or the half and half will start to curdle. Add broccoli, paprika, red pepper flakes, pepper, salt and cayenne. Turn heat  to low and let simmer for 15-20 minutes. Add cheddar and Swiss cheese and mix until completely melted. Served with warm homemade French bread.
