Crispy Popcorn Shrimp with Spicy Orange Honey

This recipe was my own twist of one given for a Food Network cooking challenge. These turned out incredibly crispy and the honey was the perfect coating.



For the Spicy Honey:
1 C. Honey
2 Garlic Cloves, Minced
1 Tsp. Pepper
1 Tsp. Salt
1 Tbsp. Red Pepper Flake
1/2 Tbsp. Paprika
1 Tbsp. Crushed Dried Orange Peel (This was found at an organic shop that sells spices in bulk)

For the Shrimp:
2 Lbs. Rock Shrimp, Cut into thirds
4 eggs, beaten
1 C. Flour
3 1/2 C. Corn Starch
2 Tsp. Salt
1 1/2 Tsp. Pepper
3 C. Panko Bread Crumbs
4 C. Peanut Oil

Garnish:
1 Orange

For the Honey:
Mix all ingredients in a hot sauce pan over the stove and bring to a boil. Let simmer for 3 minutes and set aside. (If hardens before placing over shrimp, reheat on low until it forms into a liquid)

For the Shrimp:
Pat shrimp dry. Mix flour, corn starch, salt and pepper in large bowl. Place Panko Breading on large plate and set aside. Coat shrimp with egg then place in flour mixture. One generously coated, place in Panko breading and make sure to coat all sides once again. Heat peanut oil on medium low heat for about 10 minutes. Test the oil with one shrimp before adding the rest. If it burns, turn the heat down. If it does not start to cook right away, turn it up a little. Cook all shrimp until golden brown on all sides. Remove from oil and place on a plate covered in paper towel. Place in large bowl and mix in honey until all pieces of shrimp are coated evenly. Garnish with two orange slices.
