Key Lime and Pineapple Broiled Scallops
6 Jumbo Scallops
2-3 Key Limes
1 1/2 Tbsp. Honey
1/4 C. Pineapple Juice
1 Tsp. Sea Salt
1 Tbsp. Butter
1 Graham Cracker, Crushed
6 Slices of Pineapple
Preheat oven to broil. Pat scallops dry and place on foil covered broil safe pan. Mix together juice from the limes, honey and pineapple juice. Pour over scallops. Sprinkle sea salt evenly over scallops. Place in broiler until golden brown on each side, about 5 minutes each. Meanwhile, melt butter on medium low heat.
Add graham crackers and toss around. Let cook for 7-8 minutes. Remove from heat.
Place three slices of pineapple on each plate and a scallop over every plate. Pour the extra juice from the pan over the scallops and place graham crackers on top.
