Blackened Tuna with Pineapple Salsa

For the Tuna:
2 Tuna Steaks
2 Tsp. Coriander
2 Tbsp. Crushed Black Pepper
3 Tbsp. Peanut Oil

Coat both sides of Tuna generously with coriander and crushed black pepper. Heat peanut oil in saute pan at medium high heat. Place tuna steaks in pan and cook for about 4-5 minutes on each side, or until turns brown.

For the Pineapple Salsa:
1 C. Pineapple, Minced
2 Tbsp. Red Papaya, Minced
1 Tbsp. Red Pepper, Minced
3 Tbsp. Fresh Cilantro, Chopped
1 Tbsp. Red Onion, Minced
1/2 Tbsp. Jalapeno Pepper, Chopped
1 Tbsp. Green Onion, Chopped
3 Tsp. Honey
1 Tsp. Sugar
1/2 Tsp. Crushed Pepper
Juice from 1 Whole Lime
1 Tbsp. Apple Juice

Mix all ingredients in small bowl. Serve over tuna.

Also served with a raspberry vinegar sauce and a honey plum sauce.
