Banana Nut Stuffed French Toast


6 Pieces Texas Toast
3 Large Eggs
8 Oz. Buttermilk
1 1/2 Tsp. Honey
1/2 Tsp. Salt

2 Bananas, Sliced Thin
3 Tbsp. Pecans, Crushed
Syrup of choice, I chose a Pecan flavored syrup

Preheat oven to 250 degrees. Using a knife, cut slices in each piece of the Texas toast, doing slowly, making sure not to poke a whole through either side. Take the slices of bananas and the pecans, and generously stuff each piece. Lay bread out on large plate. Mix together eggs, buttermilk, honey and salt. Pour mixture over bread and let soak in for about 15 minutes. Warm skillet on medium heat. Cook each side of bread until browned, about 5 minutes per side. When done with each piece, place on oven safe pan and put in oven to keep warm while finishing the rest of the toast. Coat with syrup when completed.
