Strip Steak and Mixed Greens with Caramelized Peach & Onion Dressing
For the dressing:
1 Tbsp. Butter
1/4 C. Yellow Onion, Chopped
1/4 Tsp. Salt
3 Peaches, Chopped
Pepper
1/2 Tbsp. Sugar
1/3 C. White Wine Vinegar
1/2 C. Olive Oil
Mixed greens: Arugula and Spinach
Melt butter on medium heat. Add chopped onions and cook until beginning to turn golden brown about 8 minutes. Add salt and toss to coat before adding peaches, a pinch of pepper and sugar. Cook until peaches become slightly mushy, about 5 minutes. Set aside. Combine white wine vinegar and olive oil with a whisk. Add peach mixture and whisk once more. Pour over mixed greens.
For the Strip Steak:
(2) 1/2-1lb. Strip Steaks
1 Tbsp. Olive Oil
1 1/2 Tbsp. Worcestershire Sauce
Salt
Pepper
Combine olive oil and Worcestershire sauce. Pour over steaks and season with salt and pepper. Place in refrigerator and let marinade for at least an hour, up to over night. Remove from refrigerator at least 20 minutes prior to cooking. Place on heated grill 5 minutes on each side, or until preferred doneness.
