Fried Pickles with Cajun Mayo
For the Pickles:
3/4 C. Flour
1/2 Tsp. Onion Powder
1 Tsp. Cayenne Pepper
1/2 Tsp. Garlic Powder
Salt, Pepper
1/2 Can Beer
3/4 C. Flour

2 C. Sliced Dill Pickles (I use baby dill size)
For the Cajun Mayo:
1/2 C. Mayonnaise
3/4 Tbsp. Cajun Seasoning
3/4 Tbsp. Cajun Seasoning
Preheat the deep fryer (or vegetable oil on the stove--medium heat). Make sure to check the temperature before placing pickles in the oil. Combine the flour, onion powder, cayenne pepper, garlic powder, salt and pepper. Afterwards, mix in beer. Add a touch more flour if mixture is too runny. You will want it to be thick enough to coat the pickle slices completely. Coat pickles in batter and place in heated fryer until golden brown. Place over paper towel when complete to cool and remove excess oil.
While pickles are cooking, mix together the mayonnaise and Cajun seasoning. Place in fridge until serving.
