Chorizo Chili


1 Lb. Lean Chuck, Ground
1 Lb. Pork Chorizo
4-5 Garlic Cloves, Minced
1 C. Red Onion, Chopped
16 Oz. Tomato Sauce
16 Oz. Diced Tomatoes
16 Oz. Chili Beans
1 Anaheim Pepper, Chopped
2 Poblano Peppers, Chopped
1 Can of Beer (I like something dark, used Creamy Stout)
3 Tbsp. Chili Powder
2 Tbsp. Cumin
1 Tbsp. Paprika
1 Tbsp. Oregano leaves, dried
3 Tsp. Brown Sugar
1 Tsp. Coriander, Ground
1 Tsp. Unsweetened Cocoa
1/2 Tsp Louisiana Hot Sauce
1 Tsp. Worcestershire Sauce

Brown meat and drain all but 1 Tbsp. of fat. The meat can then be placed in a slow cooker or large pot on the stove, whichever method is preferred. Add the garlic and the onion to the fat and cook until tender. Place in the pot with the meat. Add all remaining ingredients and mix well. Let simmer for at least two hours. Serve with shredded cheddar cheese and sour cream.
