Orange Pepper Tuna Steak & Cilantro Lime Rice


For the Tuna:
2 Fresh Ahi Tuna Steaks
2 Tsp. Freshly Ground Black Pepper 
1 Tsp Garlic Powder
3/4 C. Orange Juice
1/2 Tbsp.Soy Sauce

Evenly coat the tuna steaks with black pepper and garlic powder. Combine orange juice and soy sauce in medium sized bowl. Place tuna steaks in orange juice mixture. Refrigerate for at least 30 minutes, up to two hours. Remove from fridge. Place tuna in pan over medium high heat. Cook for about 4 minutes on each side, just enough to sear the outside and leave the inside rare. 

I topped this with a orange ginger foam.

For the Cilantro Lime Rice:

1 C. Rice, Prepared as directions on box
2 Tbsp. Olive Oil
1 Tbsp. Fresh Lime Juice
1 1/2 Tbsp. Chopped Cilantro

Combine all ingredients and mix thoroughly.Serve alongside tuna.
