Baked Sweet Potato Fries with Chipotle Aioli
For the Sweet Potato Fries:
1 Large Sweet Potato, Peeled and cut into 1/4 in. strips
1 Tbsp. Olive Oil
2 Tsp. Sea Salt
2 Tsp. Garlic Powder
Feel free to add other seasonings (cayenne, paprika, etc.) I tried adding 1/2 Tbsp. of a smoky BBQ rub and they turned out excellent!
Preheat oven to 450 degrees. Line a baking sheet with parchment. Toss sweet potatoes in olive oil and then coat with seasoning. Place on baking sheet and into the oven until crispy, about 30 minutes flipping halfway through. Serve with chipotle aioli.
Try serving with Caribbean Teriyaki Chicken Burgers!
For the Chipotle Aioli:
1/2 C. Light Mayonnaise
1 Clove Garlic, Minced
1/2 Tsp. Lime Juice
1 Tsp. Minced Dried Onion
1 Tsp. Chipotle Chile Powder
Whisk all ingredients together. Refrigerate until serving.
