Coffee Rubbed NY Strip, Gorgonzola & Caramelized Onion Potatoes, Apple Cider Rum Sauce

For the Steak:
2 Tbsp. Ground Coffee
2 Tbsp. Brown Sugar
1/2 Tsp. Salt
1 Tsp. Garlic Powder
1 Tsp. Smoked Paprika
1 Tsp. Chili Powder
1 Tsp. Coriander
2 Tbsp. Olive Oil
1 lb NY Strip

Combine all ingredients with the exception of the steak and olive oil. Coat steak with 1 tbsp olive oil. Generously coat the steak with the coffee rub. Cover and refrigerate for at least one hour up to overnight. Preheat oven to 300 degrees. Remove steak from fridge 10 minutes prior to cooking. Heat the remaining tbsp. of olive oil on med-high heat in large pan. Place steak in hot pan and cook for 4-5 minutes per side. Place in oven while finishing to prepare other components.

For the Gorgonzola & Caramelized Onion Mashed Potatoes:
2 Tbsp. Butter
1/3 C. Yellow Onion, Chopped
Pinch of Salt
1/2 Tbsp. Brown Sugar
2 Large Baking Potatoes, Peeled, Cubed and Boiled until soft
1/4 C. Half & Half
1/4 C. Milk
1/4 C. Crumbled Gorgonzola Cheese


While the potatoes are still boiling, heat 1 tbsp. butter on med-high. Add onions and cook until translucent. Add a pinch of salt and brown sugar and cook until they turn golden brown. Remove from heat. Drain water from potatoes and add the second tbsp. of butter. Mash potatoes until smooth Add onions and remaining ingredients. Whip potatoes until they become light and fluffy.

Serve with fresh Spinach and potato strings.
