Maple Bacon Doughnut Bites

1 Lb. Thick Cut Bacon
1 C. (2 Sticks) Unsalted Butter, Room Temp
2 1/2 C. Flour
2 1/2 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1/2 Tsp. Coarse Salt
3/4 C. Maple Syrup
1/2 C. Sugar
2 Large Eggs
1 Tsp. Vanilla Extract
3/4 C. Sour Cream

Cook bacon over medium heat until golden brown. Set aside to cool. Save bacon grease for batter. Preheat cake pop/doughnut maker according to instructions. In medium bowl, combine flour, baking powder, baking soda and salt. In another bowl, beat together butter, maple syrup, and sugar until fluffy, about 5 minutes. Add eggs, one at a time. Mix in vanilla. Gradually add flour mixture, alternating with sour cream. Add 1 1/2 Tbsp. of bacon grease. Mix thoroughly. Cook in cake pop/doughnut maker according to instructions.
