Bacon Wrapped Apple Cinnamon Pork Chops

1 Tbsp. Butter
1 Fuji Apple, Peeled and Sliced
1/2 Tbsp. Sugar
2 Tsp. Cinnamon
1/4 C. Raisins

2 Thick Cut Boneless Pork Chops
2 Tbsp. Worcestershire Sauce
1 Tsp Paprika
1 Tsp. Cumin
1 Tsp. Chili Powder
1 Tsp Garlic Powder
1/2 Tsp. Coriander
Pinch of salt and pepper

4 Slices of Bacon

1 Tbsp. Olive Oil

Preheat oven to 350 degrees. Melt butter on medium heat. Add apples, sugar, cinnamon and raisins. Mix thoroughly and let cook for about 5 minutes. Meanwhile, butterfly the two pork chops. Coat pork chops in Worcestershire sauce. Combine paprika, cumin, chili powder, garlic powder, salt and pepper. Coat both sides of pork chops with this mixture. Remove apples from heat. In a sauce pan, heat olive oil on medium. Generously stuff each pork chop with apple raisin mixture. Wrap two slices of bacon around each pork chop. Place in pan with hot oil and cook until bacon begins to brown, about 5 minutes per side. Place in oven for about 25 minutes.



Served with caramel apple rum sauce.
