The Best Chewy Gingerbread Cookies


3/4 C. Butter
1 C. Brown Sugar
2 Eggs
1 C. Molasses 
2 Tsp. Ground Ginger
4 C. Flour + extra for rolling
2 Tsp. Baking Soda
1 Tsp. Cinnamon
1/2 Tsp. Pepper
1/4 Tsp. Ground Cloves
1/4 Tsp. Salt

Cream together the butter and the brown sugar. Add the eggs, one at a time, followed by the molasses. In a separate bowl, combine the remaining ingredients. Slowly add the wet ingredients to the dry ingredients, mixing thoroughly. Wrap in plastic wrap and place in fridge for at least two hours, up to over night.
Preheat oven to 350 degrees. Grease two baking sheets. Roll out dough to 1/4 inch thickness. Using cookie cutters, cut dough into desired shapes. Place on baking sheet and put into oven for 10 minutes. Let cool before decorating.
