Nigerian Street Food

Nigerian Suya

3 tsp. Roasted Peanuts, Ground
1 tsp. Cayenne Pepper
1 tsp. Paprika
1 tsp. Sea Salt
1/2 tsp. Ground Ginger
1/2 tsp. Garlic Powder
1/2 tsp. Onion Powder
1 lb. Skirt Steak, Cut into Strips

Heat grill to high heat. Combine all ingredients in a bowl with the exception of the steak. Working with one strip of meat at a time, string steak on skewers and then coat all sides with the Suya spice mixture. Place on grill for about 3 minutes each side. Serve with Nigerian Pepper Sauce.

Nigerian Pepper Sauce

3 Scotch Bonnet Peppers
1 Small Red Tomato
1/4 C. Onion, Chopped
2 Tbsp. Vegetable Oil
1/2 Tsp. Chicken Bouillon Powder
Salt, to Taste

Combine all ingredients in food processor. Pulse until chopped, but still slightly coarse. 



Shuku Shuku

  • 120g shredded coconut
  • 3 egg yolks
  • 30g icing sugar powdered sugar
  • Bread crumbs
Put the coconut in a bowl and add the egg yolks and powdered sugar.
Mix thoroughly.
Form small balls of Shuku Shuku, about the size of golf balls.
Gently roll each ball in bread crumbs.
Place in the oven tray and bake in a preheated oven at 335°F for 15-20 minutes. Or till you see them turn a slight yellow all over.
