Quick S'mores Semifreddo
Serves 2
8 Marshmallows
1 C. Vanilla Ice Cream
4 Graham Cracker Squares
2 Oz. Semisweet Chocolate
1/4 Tbsp. Vegetable Oil
Preheat oven to 350 degrees. Place marshmallows on oven safe pan. Bake until golden brown, about 8 minutes. Remove from pan and fold into ice cream. Place in freezer for at least 1 hour. Place the graham crackers in a small bowl and lightly crush into course crumbs. Set aside. In a double boiler, melt chocolate with vegetable oil.
To serve, form ice cream into balls (quickly, as it will begin to melt) and roll in graham cracker crumbs. Drizzle chocolate over the top before serving.
