Herb Crusted NY Strip

For the New York Strip:

2 Boneless New York Strip Steaks
1 Tbsp Butter, Softened
2 Tbsp. Bread Crumbs
1/2 Tbsp. Fresh Parsley, Chopped
1/2 Tbsp. Fresh Cilantro, Chopped
Salt and Pepper, to taste
2 Tbsp. Vegetable Oil

Preheat broiler. Combine butter, bread crumbs, parsley, cilantro, salt and pepper. Heat oil in large saute pan. Season the steaks with salt and pepper. Place steaks in pan and saute over medium-high heat for about 3 minutes on each side. Transfer to broiling pan and spread butter and herb mixture over the top of each steak. Place the pan on the upper rack of the oven (not on the very top). Broil for about 10 minutes for med-rare.

Served with sauteed mustard greens, roasted sweet potatoes and red wine sauce.
