Roasted Chicken topped with Bruschetta



For the Bruschetta:
2 Garlic Cloves, Minced
3 Tbsp Extra Virgin Olive Oil
1/4 C. Grated Parmesan Cheese
2 1/2 C. Roma Tomatoes, Minced
1 Tbsp Red Onion, Minced
1/3 Fresh Basil, Chopped
2 Tbsp. Balsamic Vinegar
1/2 Tsp. Salt
1 Tsp. Ground Black Pepper

In a medium bowl, combine all ingredients. Set aside.

4 Chicken Breasts
1 Tbsp. Olive Oil
Salt, Pepper to taste
1/4 C. Shredded Mozarella Cheese

Preheat oven to 350 degrees. In medium cast iron pan, heat olive oil on medium high. Season chicken with salt and pepper. Place in pan and cook until golden brown, about 3-4 minutes per side. Place cast iron in oven. Let cook for 20 minutes, topping with cheese the last 5 minutes in the oven. Serve topped with bruschetta.
