Cauliflower Parmsesan
For the Sauce:
1 Tbsp. Olive Oil
1/2 Medium Yellow Onion, Diced
2 Garlic Cloves, Minced
16 Oz. Tomato Sauce
1 Tbsp. Basil, Dried
1/2 Tbsp Oregano, Dried
2 Tsp. Parsley, Dried
1/4 C. Dry Red Wine
1/2 Tbsp. Sugar
Salt, Pepper to Taste
Heat the olive oil in a large sauce pan on medium heat. Add onion and garlic and let cook for about 5 minutes. Add tomato sauce, mix well. Add remaining ingredients, reduce heat to low and let simmer for 15 minutes. Keep warm until needed.
For the Cauliflower:
1 Head of Cauliflower, Cut into Slices
1/2 Tbsp. Olive Oil
3 Tsp. Garlic Powder
Salt, Pepper to Taste
1/3 C. Breadcrumbs
1/2 C. Mozzarella Cheese
1/2 C. Parmesan Cheese
Preheat oven to 400 degrees. Coat cauliflower in olive oil. Mix together garlic powder, salt, pepper and breadcrumbs in shallow bowl. Coat cauliflower with breadcrumb mixture. Arrange evenly on baking sheet. Bake in oven for 10-15 minutes until brown, flip and repeat. Place as much as needed in an 8" x 8" baking pan. Cover with sauce, then a layer of both cheeses and repeat, finishing with a layer of cheese on top. Place in oven and cook for about 10 minutes, until the cheese on top has fully melted.
