Grilled Pineapple over Coconut Ice Cream
For the Pineapple:
1 Pineapple, Cut into Slices
1/4 C. Honey
1/4 C. Brown Sugar
Preheat grill to medium heat (300 degrees). Toss pineapple slices in honey and coat with brown sugar. Grill for 5 minutes on each side. Serve over coconut ice cream.
For the Coconut Ice Cream:
1 C. Heavy Cream
1 C. Coconut Milk
1/2 C. Sugar
1/4 C. Coconut Flakes
With a hand mixer, beat heavy cream until thick. Add coconut milk and sugar. Mix well. Toss in coconut flakes. Freeze until hard, overnight.
Serve with pineapple slightly melted.
