lemon scallop/roast pearl onion/ white wine vinaigrette

parmesan risotto/salted white fish/white pepper sauce/sage


white truffle oil pound cake/white chocolate frosting/liquid popcorn/caramel bourbon foam


For the Parsnip Panna Cotta:

1 1/2 C. Milk
1 Envelope Unflavored Gelatin
1 C. Heavy Cream
1 C. Pureed Parsnips
1 Tsp. Sea Salt

Put 1/2 C. of the milk in a 6-C saucepan and sprinkle the gelatin over it. Let sit for 5 minutes. Meanwhile, puree the remaining milk, cream, parsnips and salt in a blender.
Turn the heat on the saucepan to low, and cook the milk, stirring occasionally until the gelatin dissolves. Pour in the cream mixture and turn the heat to medium. Cook, stirring occasionally, until steam rises. Turn off the heat and ladle the mixture into ramekins or other containers. Chill the panna cotta until firm.

For the Sour Cherry Sorbet:

4 C. Cherries, pitted 
2 Tbsp. Lemon Juice
1 C. Sugar
1/2 C. Water
1 Tsp. Citric Acid

In a medium pot, combine the cherries, lemon juice, sugar and water to a simmer. Cook for about 5 minutes, stirring often, until sugar has dissolved. Add citric acid and mix to combine. Let the mixture cook for about 15 minutes, then pour in to a blender and puree on high until mixture is very smooth. Pour the sorbet mixture in to an ice cream maker and churn according to directions. 

For the White Christmas Cookie Whip Cream:

1/2 C. Milk
1 C. Heavy Cream
1/2 C. White Christmas Cookie, Crushed in to Crumbs
1/4 C. White Chocolate

Chop the white chocolate and melt in microwave. Slowly add milk and heavy cream while constantly stirring. Stir in ground Christmas cookie. Pass through a funnel & sieve directly in to whipper. Shake vigorously. Refrigerate 1-2 hours. Let sit at room temperature for 5-10 minutes before serving.


For the Liquid Popcorn:

4 C. Popped Popcorn, Popped
2 Tbsp. Butter, Melted
1 Tsp. Sea Salt

Puree all ingredients until smooth.
