Celery Apple Slaw

4 celery stalks
1 large apple (granny smith, or any of your choosing)
2 tsp. fresh lemon juice
1 tsp. olive oil
1 tsp. dijon mustard
1/2 tsp. sugar
salt, pepper to taste

Chop leaves from celery stalks. Cut celery and apple into tiny matchsticks. Toss with remaining ingredients. Use as a side for any barbecue or enjoy on its own!
