Fluffy Chocolate Chip Buttermilk Pancakes
Ingredients:
2 tsp baking powder
1 tsp. baking soda
1/2 tsp. salt
2 1/2 tbsp granulated sugar
2 c. buttermilk
2 large eggs, beaten
1 tsp vanilla extract
1/2 c. mini chocolate chips
Directions:
Whisk together the dry ingredients in a large bowl. Whisk in the buttermilk, eggs and vanilla before adding the chocolate chips. Some lumps in the batter are fine.
Heat a large skillet or griddle over medium heat.
Using a 1/4 C. measuring cup, ladle batter onto the griddle for each pancake.
Once small bubbles appear on the surface, flip pancakes and cook on the other side until golden brown.
