Vietnamese Lime Chicken Wings

Ingredients:

1/2 c. bouillon powder
1/2 c. Vietnamese chili sauce (Sriracha works as well)
1/2 c. honey
1/2 c. cooking oil
1/2 c. pureed shallot
1 garlic clove, minced
1/4 c. rice vinegar
20 kaffir lime leaves, finely chopped
24 chicken wings
1 c. cilantro leaves
1 c. roasted peanuts, chopped

Directions:

In a medium sized bowl, combine bouillon powder, chili sauce, honey, oil, shallot, garlic, vinegar and kaffir lime leaves. Place 3/4 of this mixture in a large Ziplock bag and save the remainder for brushing. Add chicken wings to the bag and allow to marinate for 1 hour. Grill wings for 25-30 minutes, turning halfway through. Brush with remaining sauce after turning. Transfer to a large plate and top with cilantro leaves and peanuts.
