Pork Tonkatsu
2 Pork Chops
1 1/2 C. Panko Breading1 Tsp. Salt
1 Egg, Beaten
2 Tbsp. Vegetable Oil
1 C. Cherry Tomatoes, Cut in fourths
1/2 C. Watermelon, Cut into cubes
1/4 C. Green Onions, Chopped
3 Tbsp. Lemon Juice
1/4 C. Olive OilSalt/Pepper to taste
4 Lemon Slices
Pound pork evenly until about 1/2 inch thick. Mix together the Panko breadcrumbs and the salt. It is easiest to put this on a flat plate before breading the pork. Place each pork chop in the egg and then pat into the breadcrumbs, evenly coating each side. Heat vegetable oil on medium heat on the stove top in large pan. Place pork in pan and cook for about 7 minutes on each side or until golden brown. Meanwhile, mix together tomatoes, watermelon, green onion, lemon juice, olive oil ,salt and pepper. Place on top or next to pork chops. Another suggestion would be to add fresh basil to this mixture as well. Pork can be left whole, or sliced into smaller pieces like a traditional tonkatsu. Garnish with two lemon slices on each place.
