Raspberry Dark Chocolate Banana Bread Muffins

INGREDIENTS:
1 large ripe bananas, mashed
3/4 cup sugar
1/3 cup coconut oil, melted
2 eggs
2 tsp vanilla extract
1 tsp cinnamon
1 1/2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup raspberries (fresh or frozen)
1/2 cup dark chocolate, chopped


DIRECTIONS:
Preheat oven to 350 degrees. 

In a large bowl, combine mashed bananas, sugar, melted oil, eggs, and vanilla. Add in dry ingredients and mix well. Fold in raspberries and dark chocolate. Pour batter in silicone muffin tray, about 3/4 full in each cup. Bake for about 35-40 minutes, until tops have risen and browned. Let cool before removing from mold. 

Serve warm with melted butter!
