Minneola Caramel Sauce

1 C. Sugar
1/4 C. Water
Zest from 1 Minneola
2 Slices of Minneolas
1/2 C. Minneola Juice, Freshly Squeezed

Add sugar and water to sauce pan on high. Bring to a boil, allow sugar to dissolve. Add zest. Stir to combine and allow to thicken before adding sliced minneolas, coating in sauce. Remove from heat and add juice. Let cool before serving over coconut or vanilla ice cream.
